Prawns in Red Sauce - Chinese style
Ingredients:
- 500 grams of large raw prawns
- 2 tablespoon of oil
- 4 stalks spring onions- shredded
- 3 cloves garlic- crushed
- 4 cm piece ginger- chopped
- 1 fresh red chilli- chopped
- 3 teaspoon Chinese rice wine
- 1 tablespoon thin soy sauce
- 1 teaspoon sugar
- Salt and pepper to taste
- 1/2 tablespoon chicken stock
- 4 tablespoon chicken stock
- 1 tablespoon cornflour
Method:
1. Snip off the legs of the prawns, leaving the shell intact. Wash well, drain and set aside.
2. Heat oil and fry the garlic, ginger and chilli for 1 minute.
3. Add the prawns and fry for 5 minutes, turning the prawns occasionally so that they cook evenly.
4.Pour in the rice wine and soy sauce. Add sugar, salt and pepper. Stir gently.
5. Add the tomato puree and stir again.
6.Thicken sauce with cornflour blended with a little water and stir on medium heat.
7.Dish out the prawns and pour the sauce over.
8. Serve garnished with shredded spring onions.
